"Composta di Cipolle al Balsamico" (= Balsamic Onion Compote)
A substantial “julienne” of red Tuscan onions with Balsamic Vinegar. It makes a good impression alongside meat, sausages, grilled vegetables, prestigious burgers or steak tartare, and… with well matured cheeses!
Ingredients: Onions, Grape must, Balsamic vinegar, Honey, Wine, Pepper, Ginger, Hot chilli pepper.
"Peperonata Dolce" (= Sweet Pepper Sauce)
A big “hit” at the Fattoria at aperitif time with pecorino and cold cuts. It’s a sweet jam made with bell peppers and a “touch” of hot chilli, fragrant and also excellent with fresh cheeses such as Robiola, Stracchino and Taleggio.
Ingredients: Sweet peppers, Grape must, Lemon, Hot chilli pepper.
"Miele di Castagno" (= Chestnut Honey)
The delicious fruit of the work of the Viallino bees, gleaming brown in colour and with a sweet but slightly bitter flavour. It goes with mature cheeses (Pecorino and Parmigiano), Gorgonzola and Roquefort, but also ricotta, yoghurt, bread, biscuits.
Ingredients: 100% Chestnut Honey.
