These sweet, fragrant “pearls”, these sparkling little bubbles, come to life in the Oltrepò Pavese area. 2020 gave “record” bunches of Moscato, golden, ripe and with a good dose of acidity. From grapes such as these it was impossible to obtain anything but a well-balanced wine, with intense varietal aromas. Harvesting by hand and soft pressing of the whole grapes, with the must cooled immediately to stop the activity of the yeasts, characterise this lively nectar. Fermentation is carried out at a low temperature (14 °C) and abruptly stopped, by cooling, when an alcohol content of 7% vol. is reached. The wine is then rapidly bottled, which helps to enhance its great freshness and characteristic bouquet.
Tasting – Colour: golden yellow, translucent and bright. The nose: pineapple, citrus fruit and linden blossom in the initial phase, notes of walnut and honey as it ages slightly. In the mouth: fragrant, sparkling and light, both in its alcohol content and thanks to its freshness, it leaves the palate harmoniously aromatic.
Wine and Food Pairing – The slightly sweet, but dry, taste makes it enjoyable from appetizer to dessert. To be tried with Tuscan sauce for “Crostini neri”, or with Parma ham, mature cheese accompanied by spicy pepper jam, ricotta and acacia honey, or strawberry jam tart.
