La Vialla’s first Metodo Classico, a “rustic champagne”, born in 2013 to celebrate the Fattoria’s 35th anniversary! Since then nothing has changed (the “recipe” is a cuvée of Pinot Nero and Chardonnay, full of olfactory complexity) except the ageing period, which is now longer. This allows the wine to develop an ample bouquet of mature aromas, hazelnut and bread crust, which combine with the characteristic traits of spumante, giving the wine a fresh, “crisp”, almost saline character. The 2017 season was one of the most “miserly”, for the quantity of grapes produced, in the last 15 years. When a vine doesn’t produce many grapes, the risk is having a high concentration of sugars and aromas in the bunches that develop, at the expense of acidity and freshness, which are fundamental for sparkling wines; for this reason the harvest was brought forward. The base wines were only blended shortly before bottling. After the “presa di spuma” (= formation of bubbles), the wine stayed for 35 months on its lees, which delicately release the typical aromas of ageing, in particular bread crust.
Tasting – Colour: crystal clear straw-yellow, which becomes stronger during prolonged ageing. The nose: aromas that recall the fragrance of a lemon-house in summer stand out, helped by the numerous, fine little bubbles; the notes of citron, bergamot orange and lemon are dominant, however more subtle light saline notes, a hint of acacia honey and yeasty tinges of fresh brioches are also perceived. In the mouth: fine and delicate, the effervescence inspires sapidity on the palate. The wine’s roundness has an aftertaste of toasted bread and walnut.
Wine and Food Pairing – Extremely versatile, it goes well from a simple aperitif to fish based first courses, from oysters and other raw seafood dishes to grilled fish, from shellfish salads to “Risotto alla Pescatora”.
