This is the youngest of La Vialla’s Metodo Classico sparkling wines. For the grapes used to make it – Pinot Nero from the Oltrepò Pavese area – the 2022 season was capricious, with thunderstorms and downpours alternating with dry periods. The vines have become very resilient thanks to their vigorous root systems and specific biodynamic care. The grapes were picked by hand, and harvesting was rapid as was pressing and the first fermentation phase. The wine, fragrant and with good acidity, was bottled in spring. This was followed by the formation of bubbles and a period of lees ageing (24 months) with gentle release of aromas. The underlying freshness is nicely balanced by the residual sugar content (around 9 g/l) given by the “liqueur d’expédition”.
Tasting – Colour: bright golden yellow, it also shimmers due to the numerous bubbles. The nose: fruity and floral aromas, green apple, white flowers, light citrussy and mineral notes, and the typical brioche. In the mouth: soft, with a nice contrast between freshness and sweetness, it leaves the mouth feeling pleasantly clean.
Wine and Food Pairing – “Standing” for an aperitif or at the table throughout a meal: from starters to fish or vegetable dishes, fresh cheeses, cold cuts that aren’t overly strong, as well as “tortelli” dressed with butter and sage, or stuffed with fish and potato... it’s an ideal companion from start (“Initiale”) to finish.
