This wine has the character of a red and the grace of a white. It’s made with Sangiovese grapes, harvested after the rainfall in early September; only plump, ripe bunches were picked, with particular focus on freshness. After destemming, the grapes were pressed straight away, remaining very briefly in the press in order to favour partial colour extraction. The must then followed the same path as a white wine (cold settling, fermentation at 20 °C). What makes it unique is the period of ageing in wooden tonneaux and barriques. Their “embrace” lasted for 10 months, during which the wine underwent malolactic fermentation, becoming more full-bodied and acquiring a richer aromatic profile.
Tasting – Colour: vivid, bright pink, with orange nuances as time passes. The nose: intense, with aromas of red fruits and ripe cherry, notes of vanilla and hints of cinnamon. In the mouth: harmonious, unexpectedly full-bodied like a red wine, delicate and soft like a white.
Wine and Food Pairing – At the table it proves to be a rosé for challenging combinations. It’s not afraid of strong flavours; crostini with pecorino and anchovies, a board of cold cuts and semi-mature cheeses. It also holds its own with complex seafood dishes, such as linguine with swordfish ragu, stuffed “Beccafico” sardines or “Cacciucco” (Tuscan fish soup). And it combines well with flavoursome main courses like a frittata with peppers, thyme and Piccantissima, or chicken “alla Diavola”.
