Sauvignon Blanc has always added its unmistakable touch to some of the Viallino cuvées, but over the years the desire grew to dedicate a bottle to it “alone”. So with the 2024 harvest, the first 100% Sauvignon white wine was created, and given the name of the small hill where its vines grow – La Grillaia. With its cool, breezy nights, it immediately proved to be an ideal spot for these grapes with their distinct yet delicate aromas. After five years of biodynamic care – the first grafted cuttings were planted in 2019 – time for the first harvest finally arrived. The summer heat and frequent rain at the end of August gave small but firm bunches, full of juice and well-balanced between acidity and sugar content, ready, perfect, for an exceptional white.
Tasting – Colour: crystal-clear and transparent, it’s a pale shade of straw yellow with greenish highlights, showing all its vivacity. It moves effortlessly, a sign of youth. The nose: the initial impact is impeccably varietal, from the fruitiness of gooseberry, Renetta apple and yellow plum, it veers towards a vegetal touch of tomato leaf and then elderflower. It closes with a slightly pungent undertone of white pepper. In the mouth: fresh and sapid in its citrussy acidity; it expresses excellent drinkability on the palate, which doesn’t tire in the finish conveyed by herb-scented alcohol.
Wine and Food Pairing – Perfect for an aperitif, it can also accompany an entire meal, from crostini with creamed salt cod or butter and anchovies, to all kinds of cold cuts, fresh or semi-mature cheeses, and even a fennel, orange and black olive salad with yoghurt sauce. It goes well with pasta dressed with pesto or spaghetti with clams. It combines perfectly with grilled fish, Savoy cabbage and salmon timbale with citrus sauce, and also chicken Mornay.
