Ingredients 120 g sun-dried tomatoes pine nuts pecorino cheese2 garlic3 basil1 pinch of hot chilli pepper5-6 tbsp extra virgin olive oil
Coarsely blend the sun-dried tomatoes, pine nuts, pecorino, garlic and basil. Then mix the paste you obtain with the oil and ground chilli pepper.
Red pesto, besides being a condiment for pasta, is delicious for making "crostini" (spread on slices of toasted bread) and for accompanying raw or cooked vegetables, in salads (including pasta and rice salads), and for adding flavour to grilled or boiled meats.
When dressing pasta with this pesto, mix it in a bowl with 4 or 5 tablespoons of the water the pasta was cooked in (set aside when you strain it) to make the sauce softer, and add a teaspoon or two of grated pecorino per person.
