Fresh and fruity, vivacious and elegant, the “house white” remains true to its 100% Viallino formula, combining the structure and finesse of Chardonnay with the aromatic complexity of Viognier and Sauvignon. The 2025 season saw alternating weather conditions, a hot July and then numerous summer storms. The Chardonnay ripened first, followed by the other two varieties. The grapes were pressed whole, followed by rapid settling and regular fermentation. Bâtonnage kept the noble lees in suspension until just a few weeks before bottling. The result is a slender and versatile wine, that combines freshness and aroma, and continually invites the palate to take another sip.
Tasting – Colour: straw yellow with slight greenish nuances. The nose: aromas of white-fleshed fruit, peach and pear, accompanied by citrussy notes, in particular grapefruit. In the mouth: extremely pleasant and slightly acidic, with an aftertaste that confirms the aromatic profile.
Wine and Food Pairing – Excellent as an aperitif and with appetizers (even spicy ones), it goes with grilled vegetables, omelettes and young cheeses. It harmonises pleasantly with first courses – spelt salad, rigatoni “cacio e pepe” (with cheese and pepper), spicy spaghetti with aubergines – and is ideal with white meat and fish, a spinach flan with pecorino sauce, or even with a nice seafood platter.
