Olive blend: Leccino, Canino, Frantoio, Carboncella and others...
The olive groves of our farming friends(1), located between the regions of Lazio, Umbria and Tuscany in an area known as the Etruscan “Tuscia”, had a torrid summer but a more benevolent spring; in particular, in Umbria and Lazio less rain fell than in Tuscany. So during the fundamental phases, flowering and fruit set, the trees didn’t suffer any damage and yielded a lot of fruit; an abundance of healthy, excellent quality olives were harvested. L'Etruscòlo is a subtle oil with typical fruity aromas, very pleasant and well-balanced. The 2023 season was difficult just about everywhere and “ha dato filo da torcere” (= made life difficult) for the Viallini and their friends.
Tasting: intense green in colour, slightly cloudy, especially during the first month (it’s unfiltered like all of La Vialla’s oils), with golden highlights. The nose detects delicate green aromas, of raw olives, green almonds, hay and thyme; the flavour is robust but not aggressive, the bitterness and spiciness can be perceived but are delicate.

The Fattoria, aided by the Famiglia Lo Franco Foundation, for over 13 years now, as we have already said, has been working to convert to Organic/Biodynamic agriculture the land (and its owners) near to that cultivated by La Vialla, in Tuscany, Lazio, Umbria and Puglia; it is one of the Foundation’s main aims. Some of the olives from the collaboration with our “farming friends” are used to produce two olive oils which have been “christened” l’Etruscòlo and la Murice; they aren’t cultivated by the Fattoria but are followed by its agronomists and by the Viallini, from the field to the olive mill, and checked with the same scrupulous analyses.
