Olive blend: 50% Morellino, 50% Leccino
Tuscans love their freshly pressed oil, with its intense, fruity, spicy flavour that is the “offspring” of the precious polyphenols. The exceptional, strong flavour and the unique, penetrating aroma are, however, not always appreciated... some palates and dishes are, quite rightly, more delicate. So, as of last year we have begun to produce a “mild” oil, from sweeter olive varieties, Leccino and Morellino, picked later. It’s soft, mellow and milder, with aromas of spring grass as well as floral and balsamic notes, well-balanced, slightly bitter when it’s new, suitable for more delicate or younger palates. It appeals to children and is ideal for making mayonnaise, preparing pesto (with basil, wild fennel or rocket), seasoning both raw and boiled vegetables, fish, and pasta or rice salads...
