These tempting “mini-salamis” are very rare, for various reasons: their reduced size means that the process of making and maturing them requires particular care; they’re certified organic and are handmade, with meat produced without the use of hormones or antibiotics; they don’t contain nitrites, nitrates, sodium ascorbate or lactose, just a 100% Viallino mixture of natural herbs and spices, amongst which Tuscan fennel seeds, giving them un unmistakeable taste and aroma. They are also gluten free, but… packed full of flavour!
