A great, potent and elegant red, from some of the highest vineyards at the Fattoria. The mineral, schistose soil (which is “duro”, hard, as the name suggests), the orientation, wind and cool summer nights, create ideal conditions for this Viallino super Tuscan. The thick-skinned grapes of the two varieties have adapted well to the torrid heat of recent years, and are also protected by the foliage that is left to grow. After manual harvesting, fermentation took place separately (17 days for the Merlot and 22 for the Cabernet) as did the period of ageing in barriques, which lasted at least 24 months. After blending, the work was completed by another 12 months of ageing in the bottle.
Tasting – Colour: deep, opalescent ruby red, which displays its vigorous body as it rotates in the glass. The nose: small dried fruits, blackberry and sour cherry jam, cedar wood, leather, pipe tobacco, concluding with hints of dark chocolate. In the mouth: sumptuous, warm and harmonious; potent, with rich tannins and an enveloping finish that elegantly reproposes small dark fruits in alcohol.
Wine and Food Pairing – It’s just right with traditional Tuscan dishes and a classic Sunday lunch. Ideal for a bruschetta with pecorino and onion compote, pappardelle with wild boar sauce, polenta with Porcini mushrooms, or a flavoursome Tuscan “peposo” (a typical stew from the Valdarno area). It’s also excellent with all types of mature cheeses.
