Straightforward and vivacious, Vino Novo gives us the first “sip” of the new vintage at the Fattoria and is always awaited eagerly. Its bouquet – with a note of fresh must – and characteristic purple-red colour tell the story of the recently concluded harvest, and give a preview of the aromas and flavours of the wines-to-come. In 2025, first the hot weather and then the rain in August resulted in bunches of Merlot that were small but full of juice, with a slightly lower sugar content than usual, and plump, juicy Sangiovese grapes. The two grape varieties fermented separately for different lengths of time, 18 days for the Merlot and around 10 for the Sangiovese, both at 26 °C and with very brief periods of pumping-over. The excellent health of the grapes made it possible to add a minimal amount of sulphites, which was beneficial for the freshness, aroma and vibrant colour of the Vino Novo. Blending was carried out 15 days before bottling, and the wine was ready to be tasted immediately!
Tasting – Colour: bright purple red with violet nuances. The nose: fruity-sweet, Marasca cherry, plum, and spice in the finish. In the mouth: young tannins, robust, full-bodied and enveloping; good structure and a spicy aftertaste.
Wine and Food Pairing – It goes perfectly with the traditional Tuscan country fare of this time of year: ribollita, “farinata” with Tuscan kale and beans, pasta with chickpeas, squash risotto, roast chestnuts or some fragrant “castagnaccio” (Tuscan chestnut cake). It’s “Novo” (= new), but excellent all year round! Other good companions for it are cold cuts and medium-mature cheeses, spaghetti with tomato sauce or with garlic, olive oil, chilli pepper and breadcrumbs, and also grilled meats.
