There are wines that go against the rules, or even rewrite them... il Birborosso, with that slightly mischievous character suggested by its name (“birbo” = rascal), is one of them. A light, fruity red that’s not too tannic and also perfect in summer, because – surprise! – it’s served chilled.
The 2025 season finally saw favourable weather conditions, the summer was cooled by thunderstorms that provided water for the grapes without harming them. The harvest, carried out slightly late due to the rain, brought healthy bunches of plump, fragrant grapes to the winery. Cold maceration (at 6 °C) ensured extraction of sweet, light polyphenols, and kept the tannins in check. Fermentation also took place at a low temperature, without the grape skins, to preserve the varietal aromas so that they are found intact in the glass. Lastly, the blend softened the structure of the Sangiovese with the elegance of the Montepulciano.
Tasting – Colour: very strong purple red with violet highlights. The nose: intense and fruity, with notes of dried cherry, then plum, blueberry and hints forest fruits in general. In the mouth: the pleasant, natural effervescence enhances the wine’s freshness; subtle tannins with good acidity and consistency.
Wine and Food Pairing – Served chilled, at 10 °C, it’s ideal as an unusual aperitif or to accompany a picnic with antipasti, fresh cheeses, cold cuts and “crostini” (including spicy ones). At the table it goes with flavoursome fish dishes such as “cacciucco” (Tuscan fish soup) or cuttlefish “in zimino”, and it’s good for putting out the fire of a dish of pasta “all’arrabbiata” or a mixed grill with Piccantissima sauce. And when summer arrives... it’s excellent for making refreshing Sangria!
