This is La Vialla’s historic rosé, always popular when it’s time for an “aperitivo” at the Fattoria. It wins everyone over with its unmistakeable character, delicate aroma and versatility when paired with food. Created with a blend of three red grape varieties with different characters, it gets colour and body from the Cerasuolo, Tuscan vigour from the Sangiovese, and international finesse from the Pinot Nero (which has been added to the other two this year). The summer heat interspersed with rain resulted in plump grapes with excellent acidity. Harvesting was done at different times according to their ripeness, as was vinification. Rapid fermentation and the subsequent racking on fine lees, allowed the base wines to preserve their freshness and aromas. In December they were blended and then, after a period in steel, the rosaRosa was bottled.
Tasting – Colour: subdued pink with a slightly golden rim. The nose: a floral onset with delicate notes of dog rose, then raspberry and redcurrant. In the mouth: dry and austere, with a silky mouthfeel and an aftertaste similar to white wine.
Wine and Food Pairing – Perfect as an aperitif (also served like a cocktail, with ice, citrus fruit juice, tonic water...), it goes with a board of cold cuts and cheeses, but also with light pasta dishes (penne with tomato sauce or with Parmigianina) and main courses such as grilled fish, octopus with potatoes, white meat, and vegetable dishes, both spicy and non-spicy.
