A year after its debut with the 2024 vintage, Barriccato Rosé has proven itself to be a rosé that combines the vibrancy of a young wine with the depth given by wood, the character of a red with the delicacy of a white. The grapes were harvested slightly early in order to capture the moment in which the variety’s freshness hadn’t yet given way to warmer, riper notes, and also to limit the alcohol content. After destemming, a brief period in the press during crushing was sufficient to extract an intense, bright pink colour. The must was treated as it would be for a white wine, with cold settling and fermentation at 20 °C. Then came the moment of our gamble that – judging by how much everyone appreciated it – paid off, the period in wood, used tonneaux and barriques, where alcoholic and malolactic fermentation were completed. Six months of ageing made the wine more full-bodied and rounded, enriching its aromatic profile without detracting from its youthful spirit.
Tasting – Colour: it has the bright pink hue of a Tuscan sunset, tending towards orange as time passes. The nose: floral and fruity aromas, with prominent notes of Marasca cherry and wildflowers. In the mouth: flowing yet soft and full-bodied, with a slightly tannic finish also due to the aftertaste from the wood, which prolongs the persistence.
Wine and Food Pairing – It’s rosé for challenging combinations and is therefore not afraid of strong flavours (crostini with pecorino and anchovies, a board of cold cuts and semi-mature cheeses...) nor of complex seafood dishes, such as linguine with swordfish ragu, stuffed “Beccafico” sardines or “Cacciucco” (Tuscan fish soup). “On land” it goes well with chicken “alla diavola” or a frittata with peppers, thyme and Piccantissima.
