It’s called “Selvatico” (= wild) because it was born free, following nature. Unlike its “sibling”, the classic version, the Mussantino Rosé owes its delicate perlage to the Metodo Ancestrale (= Ancestral Method), a process that occurs spontaneously (without the addition of extraneous sugars) and keeps its freshness and primary aromas intact. It’s made with Pinot Nero from the Oltrepò Pavese area, where the 2025 season produced plump, juicy, healthy grapes. The brief contact between skins and must during pressing gave the wine its lovely pink hue. The must was kept chilled and then, when it was almost time for bottling, according to the natural ancient-yet-modern method, brought back to a temperature of 16 °C to trigger the formation of bubbles, which continued for 20-30 days.
Tasting – Colour: powder pink, which over time tends towards onion skin with golden hues. The nose: small red fruits – raspberry, wild strawberry – and dog rose, with a slight floral note of camomile. In the mouth: fresh and lively, with a fine effervescence that is never intrusive and enhances its aromatic profile.
Wine and Food Pairing – It gives its best when it’s time for an “aperitivo”, but it also goes well with starters – stuffed eggs, frittata or savoury pancakes – and light dishes such as meat or fish carpaccio, or with pasta dishes such as ravioli dressed with butter and sage, or linguine with pesto and cherry tomatoes.
