This year, the white wine from the Valdichiana, a valley of historical towns such as Cortona and Montepulciano, was made with a small addition, 10%, of Chardonnay grapes, to refine the rustic character of the Trebbiano and give a subtle “whiff” of tropical aromas, as well as softness and minerality on the palate. The challenge during the sweltering summer of 2022 was to take grapes that weren’t overly ripe to the winery, in order to balance their considerably high sugar content. This sweetness resulted in wines that have a high alcohol content and are, at the same time, soft and well structured. After slow fermentation at a low temperature, the first racking, to separate the coarse lees (which were very dark in 2022), was carried out early, and only the fine, delicate lees were maintained in suspension (bâtonnage) to preserve aromatic complexity.
Tasting – Colour: brilliant, pale golden yellow. The nose: an intense floral aroma, followed by notes of hay and banana, with hints of pineapple and yellow citrus fruits. In the mouth: rich, alcoholic but well structured, powerful but soft.
Wine and Food Pairing – This full-bodied white goes well with appetizers and first courses, even more “substantial” ones such as eggs or crostini with Salsa Verde, “Carabaccia” (Florentine onion soup) with Parmigiano or pecorino, pici with white ragu (without tomato), but also with seafood starters, fish dishes (again without tomato) or grilled fish.
