From the Fattoria’s highest vineyard (668 metres a.s.l.), cultivated on the land around Spedale farmstead (a spot the Viallini have always loved), comes a full-bodied and complex white in which the characteristics of the grape varieties combine harmoniously. The 2024 season was excellent for its grapes, which were all harvested before the rainfall in September. The bunches of fragrant, pinkish Gewürztraminer, and the small, firm bunches of Viognier fermented together, as did the Sauvignon and Chardonnay. Fermentation was completed in oak casks containing 10 hl, with frequent bâtonnage and a long 12-month period of resting on the fine lees. This gave the wine body and balance, as well as an unmistakeable buttery note due to the almost complete malolactic fermentation. After blending, the Pievina di Spedale aged for another 3 months; it was neither stabilised nor refrigerated, so it remains “alive” and – over time – may develop a little sediment, a sign of its naturalness.
Tasting – Colour: straw yellow, brilliant with greenish highlights. The nose: a rich bouquet that opens with white peach and tropical notes of mango, then vanilla and wildflowers, and a hint of balsamic boxwood. In the mouth: dry and velvety, with good sapidity and a persistent, aromatic finish that is perfectly consistent between nose and palate.
Wine and Food Pairing – Its ample bouquet deserves to be enjoyed slowly, even on its own. At the table it goes with dishes from both sea and land. It’s excellent with spaghetti with clams, saffron risotto, or seabass ravioli dressed with the fish’s cooking juices. It also pairs well with delicate white meat dishes, such as chicken with lemon and ginger, or rabbit stuffed with herbs.
