A monovarietal Vermentino from La Vialla’s vineyards at Civitella Maritima, in the Maremma area, which sit on a hill facing in the direction of the sea, surrounded by scents of salt and Mediterranean scrub. A particularly lucky terroir, reflected in every sip of this sunny white wine with its intense, almost aromatic bouquet, capable of capturing the essence of the Tuscan coast in a glass. The 2025 season was marked by “lively” weather, with very hot days and sudden thunderstorms. The vines grew a lot and ripening concluded earlier then in previous years. By the end of August, the grapes were ready to be harvested, plump, fragrant and with an excellent balance between sugar content and freshness. After pressing the bunches whole and slow fermentation at a low temperature (17 °C), a period on the fine lees with regular bâtonnage gave the wine complexity and softness, without detracting from its freshness.
Tasting – Colour: pale straw yellow with greenish highlights. The nose: intense, fruity aromas of peach, citrus fruits and banana, with a slight touch of iodine reminiscent of the sea. In the mouth: dry and fresh, marked minerality and pleasant saline notes that enhance its Mediterranean character.
Food and Wine Pairing – Even at the table it has a preference for the sea. Perfect with seafood pasta dishes such as linguine with musky octopus or spaghetti with clams, it also goes with oven-baked (or even salt-baked) fish, octopus with potatoes, or grilled squid. Thanks to its freshness and salinity it’s also excellent with more flavoursome recipes such as salt cod “alla Maremmana”, spinach and ricotta tortelli dressed with butter and sage, bruschetta with fresh cheese and honey, or an artichoke and sausage tart.
