A fresh, fragrant white wine, named after the hill on which the Sauvignon Blanc vines from which it comes were planted, back in 2019. This is its second vintage, from a year that was excellent for this variety of white grapes grown in soil which is ideal for them; with good drainage, composed of broken-up marl and sandstone. Rain in early September refreshed the grapes and made them swell, so they reached harvest time full of juice with a good balance between sugar and acidity. Cool nighttime temperatures also helped enhance the Sauvignon Blanc’s primary aromas, which, after rapid pressing, “exploded” during fermentation in the winery (at 16 °C). The wine remained on its fine lees for four months, after which it was bottled in a protective atmosphere, a technique that is crucial in order to avoid oxidation and preserve colour, aroma and flavour.
Tasting – Colour: straw-yellow with greenish highlights. The nose: the first aroma is of passion fruit, accompanied by prominent citrus notes dominated by pink grapefruit, with a hint of boxwood typical of Sauvignon. In the mouth: its aromatic character is very slightly intrusive but pleasant, the acidic note is vivacious, the finish fresh and persistent.
Wine and Food Pairing – Its “magical moment” is as an aperitif, but it can also be enjoyed with strongly flavoured dishes, crostini with creamed salt cod, bread with butter and anchovies, or a fennel, orange and black olive salad dressed with some good olive oil. La Grillaia also goes nicely with classics such as pasta with pesto, spaghetti with clams, grilled fish, salmon in citrus sauce, or even a tasty cabbage timbale, or some pan-cooked chicken. And it’s excellent with all kinds of cold cuts, and young or semi-mature cheeses.
