*** Crostini with Gorgonzola and Walnuts
Ingredients for roughly 20 crostini (10-12 people):
20 slices Tuscan bread
200 g Gorgonzola
2-3 tbsp milk
50 g shelled walnuts
2-3 tbsp extra virgin olive oil
Preheat the oven to 180 °C; lay the freshly sliced bread, not too close together, on a baking tray greased with olive oil and put it into the oven. When the slices are golden brown on one side, turn them over so the colour becomes the same all over. Using a fork, combine the gorgonzola and milk until you obtain a thick creamy mixture. Chop the walnuts, set aside 1 or 2 spoonfuls (the larger pieces) to garnish the crostini, and add the rest to the Gorgonzola cream. Remove the slices of bread from the oven when they are golden brown and, while still warm, spread them with the gorgonzola and walnut mixture. Garnish the crostini with a few pieces of walnut in the centre of each one.
*** Crostini with Butter and Anchovies
Ingredients for 6 people:
12 small slices of homemade Tuscan bread
80 g butter
12 anchovy filets in olive oil
24 capers in vinegar
parsley for garnishing
Cut the bread into slices roughly 1 cm thick; you can use them either as they are or toasted. Spread a generous amount of butter on each slice. Place 2 capers, previously rinsed and squeezed well, in the centre of each crostino. Carefully drain the oil off the anchovies and curl one around each pair of capers. Stick a toothpick into the centre, garnish with a few parsley leaves and – in next to no time – you have a delicious appetizer that’s a classic here in the countryside.
*** Warm Crostini with Sausage and Stracchino
Ingredients for 6 people:
3 fresh Tuscan pork sausages (about 300 g)
500 g Stracchino (1) or another fresh cream cheese (according to taste)
6-8 slices of Tuscan or homemade bread, cut in half
Skin the sausages and, in a bowl, mix them with the Stracchino until you have a smooth mixture. Spread it generously on the slices of bread, and then arrange them on a baking tray lined with greaseproof paper. Put in a preheated oven, at 200°C, for about 15-20 minutes, until they turn a nice golden colour. Serve the crostini hot… they are absolutely delicious!
