In the region of Le Marche, the 2021 season, with its severe drought and weather that varied from one place to another, challenged the Viallini from the vineyards and winery. The process of selecting vineyards and bunches was even more meticulous and laborious. Some had very ripe grapes, while in others they were greener with pronounced acidity and freshness. Therefore, blending was even more important for the quality of the wine. The bunches were rapidly pressed whole, with a new press that uses a nitrogen atmosphere (in the absence of oxygen), and only the "cream“ of the must was used, before continuing more intensive pressing. This made it possible to choose the must to be fermented in small tanks, where the wines from the different vineyards are kept separate. After fermentation, blending was carried out straight away, in order to have a few months of "joint“ ageing before bottling.
Tasting - Colour: straw-yellow with slightly greenish highlights, tending towards golden as time passes in the bottle. The nose: yellow-fleshed fruit, peach and pineapple, with hints of camomile. In the mouth: complex but extremely harmonious, with a beautiful sensation of freshness and "cleanliness“.
Wine and Food Pairing - To be served chilled, but not too cold, with fish and seafood prepared in every possible way, without forgetting that it happily "fraternises“ with delicate first courses, asparagus risotto o linguine with pesto, with grilled vegetables, goat‘s cheese and soft cheeses in general.
