Pale colour, a hint of effervescence, delicate aromas... NubeRosa is light (also in its alcohol content) and delicate, as its name – which literally means pink cloud – suggests. It comes from an interesting trio of grapes, each with its own special “trait”: the freshness of Trebbiano, the creaminess of Chardonnay and the aromas of Pinot Nero. Depending on when they ripened, the bunches were picked between August and September, after a season refreshed by rainfall that produced grapes swollen with juice and rich in sugar. Before fermentation, the must was cooled to separate the solid particles and the pulp, in order to obtain a lighter, more limpid wine. Fermentation was halted towards the end by cooling, so as to maintain the few grams of sugar and the wealth of natural CO2 that characterises this wine (it has very subtle, fine bubbles!). Pleasant, very drinkable but not banal, year after year it continues to win new admirers.
Tasting – Colour: straw yellow, with a faint hint of pink. The nose: Golden Delicious apple, banana and white-fleshed fruit stand out; hints of walnut and dried fruit emerge as time passes. In the mouth: lively, acidic and at the same time suave, with a subtle natural effervescence that invites you to take another sip.
Wine and Food Pairing – Fresh and light, it’s perfect as an aperitif, excellent with seafood or appetisers; it goes well with omelettes and bruschetta (possibly with artichokes, sun-dried tomatoes and a little Piccantissima, with pickled vegetable Giardiniera, pecorino cheese and olive oil). But it also willingly accompanies first courses such as gnocchi with prawns and bombolini tomatoes, or pasta with zucchini and pecorino, as well as not overly flavoursome fish dishes.
