This is a “transgressive” Pinot Grigio, unusual because it’s unfiltered – therefore cloudy – and because it comes from Tuscany. It’s the offspring of the Fattoria’s vines that grow on a hillside at Castelvecchio, near the town of San Gimignano, characterised by distinct mineral notes that are a geological legacy of this land, which in prehistoric times was submerged by the sea. The Pinot Grigio grapes are usually among the first to be picked. In 2025 the rain in September led to rapid harvesting and equally rapid pressing. The must was immediately cooled to 10 °C and, after settling for a night, was quickly racked. Hardly any sulphur dioxide was used. Fermentation was lengthy, slow and took place at 17 °C, with a slight increase in temperature towards the end to consume almost all the sugars. After resting on the fine lees, which were kept in suspension with regular bâtonnage, the wine was bottled without being filtered, in order to preserve its genuine character and aroma.
Tasting – Colour: opalescent, with slight coppery notes that will intensify as time passes in the bottle. The nose: white-fleshed fruit (pear, Golden Delicious apple) with delicate citrussy hints. In the mouth: soft, round, with an almost sweet sensation due to the yeasts, and not to the sugars, which are almost totally absent.
Wine and Food Pairing – Excellent with fatty fish such as salmon, with grilled white fish, linguine with seafood carbonara, or even shellfish in cocktail sauce. It also goes well with menus “from the land”, perhaps with appetizers such as onion and pecorino crostini, fried chicken or a frittata with sweet peppers, and it’s perfect with young cheeses.
