When summer arrives and the temperature rises, a simple, tasty pasta dish accompanied by a fresh, assertive, special wine, is just what’s needed. The Linguine, a long pasta shape similar to spaghetti but slightly “flattened”, are made from durum wheat semolina and artisanally produced using bronze dies. They’re coarse and go perfectly with the basil Pesto, which is prepared raw in the “pentoloni” (= big pans) in the Fattoria’s sauce kitchen, using basil from the latest harvest, extra virgin olive oil, pine nuts, Parmigiano D.O.P. cheese and pecorino from La Vialla. And to sip, there’s a unique, unfiltered, white wine, made from Pinot Grigio grapes grown in the Viallino vineyards near to San Gimignano; velvety, harmonious and elegant, with a bouquet of white fruit and delicate citrus notes.
