The most precious barrels in Tuscan cellars have always been those for Vin Santo Riserva: the oldest, best Vin Santo, with the most intense aromas. The 2015 season – one to be remembered! – with regular ripening and beautiful weather during the harvest, gave the grapes extra days on the vines and selection was even more rigorous. The grapes were arranged on racks to “age” for at least 2 months, becoming enriched with aromatic compounds thanks to Botrytis cinerea (noble rot). The must “rested” in 97 litre Caratelli for at least 4 years. The Riserva is distinguished by the choice of vineyards, grapes that are on average richer in extract, aromatic complexity and carefully selected bunches, dried out uniformly. Its “special” Caratelli barrels are followed with painstaking care throughout fermentation and ageing.
Tasting – Colour: bright copper, brownish brass, with pale metallic tinges that can be seen as it swirls in the glass. The nose: an explosion of dried fig, walnut and other dried fruits, even hints of porcini mushroom and autumnal forest floor, all steeped in vanilla and delicate wood. In the mouth: it unfolds in full on the palate, with its tones and notable consistency that lingers at length. It leaves the mouth with a pleasantly sweet sensation, almost a caress for the taste buds.
