It succeeds in capturing for us the fleeting moment during fermentation when the grape juice is no longer must but not yet wine either… a Viallino “idea” (patented!) that makes it possible to enjoy the sweet flavour of grapes with a hint of tannins, aromas of red fruit, fine yeasts and… bubbles! It’s made with the “house grape”, Sangiovese, offspring of a very hot season, which produced small bunches of loosely clustered grapes, with crisp skins, full of polyphenols and sugar. The grape must is obtained through extremely soft pressing, immediately cooled, and kept at 0 °C until partial fermentation is induced, then blocked again when an alcohol content of 7% vol. is reached. The MostoVino is bottled without filtering and pasteurised straight away to avoid refermentation. In this way the sweet, fruity freshness and lively, bright colour are maintained.
Tasting – Colour: opalescent, between deep magenta and bright blood red, with lighter highlights given by the fine lees that are suspended in it and then settle in the bottom of the bottle. The nose: sweet fruitiness with pronounced strawberry, notes of raspberry and a touch of plum. In the mouth: effervescent and slightly sweet, a high degree of aromaticity well balanced by freshness.
Wine and Food Pairing – It makes an excellent aperitif in all seasons, accompanies mixed appetizers of fresh cheeses, cold cuts, bruschetta and crostini, and is excellent for a picnic with zucchini frittata, vegetables preserved in oil or pickled, meatballs or their vegetarian siblings, mini pizzas and stuffed focaccia.
