This wine “tells the story” – lived with passion by farmers (the Viallini) – of a red wine that comes from 5 different grape varieties, all Tuscan, autochthonous; picked when they reach perfect ripeness, each one at the right moment and in the right quantity, according to its characteristics. The result of the late harvest is a unique wine – complex, harmonious, well balanced between softness and freshness. The grapes from 3 of the varieties, Sangiovese, Pugnitello and Aleatico, are left to dry out in well-ventilated, dry rooms until December. Then they are put to ferment directly “in” the wine obtained from the other 2 varieties, Colorino and Malvasia Nera. The wine then ages “assembled” in this way, already in its final “cuvée” (another unusual characteristic).
After 30 months the result is an opulent nectar, with a Viallino character and soul, balanced between tradition and research.
Tasting – Colour: impenetrable red, dark with violet highlights tending towards garnet as time passes. The nose: ample, elegant bouquet of black cherry, blueberry and jam; strong presence of the aromas developed during ageing such as liquorice root, cinchona, tobacco leaf and spicy hints of black pepper. In the mouth: it enters vigorous and soft, flowing on a complex fusion of tannins. A fresh note of sweet fruit – Marasca cherries – accompanies the long, persistent conclusion.
Wine and Food Pairing – Podere La Casotta goes well with cannelloni with Tuscan ragu and hazelnuts, stewed wild boar, beef fillet with a porcini mushroom cap, pork in apple sauce, mature pecorino with Balsamic Onion Compote.
