Dense, complex, velvety, deep red with an intense bouquet. It’s a feast for the eyes, nose and palate, offspring of a year “... worthy of framing”, says oenologist Marco Cervellera. Before blending, the Sangiovese and Malvasia Nera grapes are left to dry out (the same procedure that is used for the Vin Santo grapes); this makes them sweeter and more aromatic, and their must is denser and more concentrated. They undergo alcoholic fermentation separately, while malolactic fermentation takes place after blending. The rest is left to time: 24 months in barriques and another 6 months in wooden casks, during which the wine continues to ferment until leaving a reduced residual sugar content, a legacy of the particular production process (similar to that used for Amarone). The work is then completed by another year of ageing in the bottle.
Tasting – Colour: deep, dark purple red, with lively bluish highlights... despite its age. The nose: a succession of delicately spicy notes and aromas of ripe fruit, blueberries and blackcurrants, plum jam and roasted coffee beans, hints of mint and cinnamon, as well as vanilla from the wood. In the mouth: full-bodied, velvety and soft, albeit rich in tannin and body, an extremely long-lasting caress for the palate, consistent with the aromas perceived.
Wine and Food Pairing – A real personality, it goes perfectly with “Sunday classics” such as braised, roast or stewed meats, as well as with sweet and sour wild boar, ossobuco, risotto “alla Milanese” or pappardelle with wild boar sauce.... but you can also sip it alone (or in company) on winter evenings in front of a blazing fireplace.
