The 2019 grape harvest was distinguished by the fact that it was carried out later than in recent years. The slower development of the grapes led to a build up of sugary substances in the fruit, as well as exceptional ripening of the skins and the polyphenols that they contain, all of which favoured the flavour and sweetness of the wines. Work in the winery was therefore reduced to a minimum, simply destemming and maceration, which ranged from 15 days for the Sangiovese, to 18 for the Merlot. Alcoholic fermentation took place at 26 °C, rapidly and steadily followed by malolactic fermentation. So the ageing phase began immediately and continued for a few months until, after racking, blending the various barrels and light filtering, the wine was bottled.
Tasting – Colour: ruby red of average intensity, with a garnet rim that gradually becomes more evident with ageing. The nose: sweet spices and small red and purple fruits; balsamic notes and hints of black pepper. In the mouth: characteristically Chianti-like in its dry taste, but with soft tannins that mature over time.
Wine and Food Pairing – It’s a wine that doesn’t have many limits: however, its favourite dishes are traditional ones, “Pici al ragù”, red meats (grilled or roasted), thick bread soups, medium and mature cheeses, cured ham and cold cuts…
