The grapes for our "house red“ - the first of La Vialla‘s wines free from regulations, soft, with an important body, extremely Tuscan - have adapted to the high temperatures of the last few years, such as 2020, in which the summer was hot although not one of the driest. The Merlot ripened in advance, before the end of August, while the Sangiovese and Cabernet Sauvignon, which are later varieties, ripened at the normal time. As far as alcoholic fermentation is concerned, in recent years it has gradually been carried out at lower temperatures (23-24 °C), because the heat in the vineyard facilitates extraction of polyphenolic substances and aromas from the skins.
Tasting - Colour: ruby red that turns towards garnet with ageing in the bottle. The nose: Marasca cherry, plum and red currant, with spicy shades that become dominant as the wine ages. In the mouth: robust in its tannic consistency, but not particularly astringent and with a dry finish.
