La Brumosa, Metodo Ancestrale Integrale 2021

The season was excellent and well-balanced in the Oltrepò Pavese, giving Pinot Nero grapes with a good structure that reached superb sugar levels, while maintaining considerable acidity. These factors are very important for the "Metodo Ancestrale“, which doesn‘t foresee any addition of sugar but simply makes use of that naturally present. The bunches are pressed whole; immediately followed by settling, in order to avoid extraction of colour. During fermentation, when the sugar content is around 24 g/l, the pressurised tank‘s valves are closed, and the natural formation of bubbles begins. The "Metodo Ancestrale“ gives the wine greater freshness and aromas, and makes it possible to use less sulphites. The presence of noble lees in the bottle lengthens the wine‘s maturation process and its notes evolve from fresh fruit to bread crust. It seems soft in the mouth even though it‘s completely dry (just 1 g of sugar per litre).
 
Tasting  Colour: powder pink, almost onion-coloured, tending towards orange as it ages. The nose: raspberry and Marasca cherry prevail; hints of wild strawberry, with a note of yeast in the finish. In the mouth: the presence of yeast and the wine‘s cloudiness make the perlage coarser, but favour softness on the palate and drinkability.
