The high temperatures of recent summers have favoured rapid ripening and accumulation of sugar in the grapes; the sweeter they are, the higher the wine’s alcohol content is… a real challenge for the production of wine that isn’t overly alcoholic. For the Fattoria’s lighter wines, in general, harvesting has been carried out early; in particular the Trebbiano grapes, which were picked 2 weeks before their normal ripening period. For NubeRosa, after vinifying them separately, we blended the Tuscan variety with the two international ones, and then the wine was kept on the fine lees until it was bottled…
from an unusual but fortunate combination, we obtain a wine in which terroir and the freshness of fruit and flowers merge delicately.
Tasting – Colour: coppery white with onion-coloured notes – the influence of Pinot Nero – and greyish nuances. The nose: pear and Golden Delicious apple, and wildflowers. In the mouth: lively on the palate due to the considerable presence of CO2 remaining from fermentation, it flows pleasantly sweet and calls for another glass.
Wine and Food Pairing – In the glass it has the charm of an aperitif and makes a good match with appetizers, vegetable and fish first courses, grilled vegetables and various kinds of “bruschetta”. It’s also excellent with fish dishes that are not too flavoursome.
