This white wine from the vineyard at Casa Conforto farmstead is made with Trebbiano, a quintessential Tuscan grape variety, combined with Chardonnay to accentuate its body and elegance. For both varieties, the hot summer with some “thirst-quenching” rain resulted in healthy, golden bunches of grapes, which ripened more uniformly than in recent years, enhancing their aromas and acidity. At the winery, pressing was done rapidly to avoid excessive colouring and fermentation took place at a low temperature, with malolactic fermentation halted in order to preserve freshness and sapidity. Only the finest lees were left in suspension, to protect the aroma and the wine in a natural way, thereby minimising the amount of SO2 added.
Tasting – Colour: intense yellow, brilliant, almost gleaming. The nose: white-fleshed fruit, above all Golden Delicious apple and pear, with hints of walnut, wildflowers and hay. In the mouth: dry and austere, with a delicate yet assertive flavour of Trebbiano Toscano. The substantial body and alcohol content are well balanced by the natural freshness.
Wine and Food Pairing – Straightforward and extremely versatile, it doesn’t shy away from unusual combinations such as crostini with Asparagina or artichokes preserved in oil. It pairs wonderfully with delicate cold cuts, young cheeses, and pasta dishes such as penne with artichokes and pecorino, or fusilli with creamed peas and pancetta, and it’s also perfectly at ease with seafood dishes.
