Made with 100% Vermentino grapes – a semi-aromatic variety – grown in La Vialla’s vineyards near Trapani (Sicily), which are caressed by the sea breeze, this white wine has the aromas and mineral sapidity of the Mediterranean. The summer of 2025 was very hot and, to safeguard the bunches, the harvest was carried out at dawn. The grapes, fresh and with a well-balanced sugar content, were pressed whole in order to keep the varietal aromas intact. The use of sulphites was, as always, limited to a minimum, also thanks to constant bâtonnage. This process, after fermentation, keeps the noble lees in contact with the liquid; in this way, not only is natural oxidation kept under control, but the wine also acquires a more complex bouquet and a pleasant smoothness, which is not due to sugar but to polysaccharides.
Tasting – Colour: straw yellow with greenish highlights. The nose: an explosion of floral aromas dominated by elderflower, with citrus notes and subtle hints of white fruit. In the mouth: sapid and dry, fresh like a sea breeze, mineral with a “pinch” of flint (Sicily is the island of Mount Etna, Europe’s most active volcano).
Wine and Food Pairing – It goes perfectly with seafood dishes from its region, such as spaghetti with squid ink or pasta with wild fennel pesto and sardines. Thanks to its sapidity, the wine pairs wonderfully with the saltiness of shellfish, seafood salads, and fried or grilled fish. However, it’s also excellent with tasty aubergine Parmigiana, for example, and – Sicilian DNA is true to form! – with all kinds of arancini rice balls.
