Peel the onions, wash them and cut them into segments. Clean the zucchini and cut them into chunks. Wash the cherry tomatoes and slice them in half. Sauté the peeled cloves of garlic in the olive oil. Put the onions into the pan and cook for 5 minutes. Add the zucchini and continue cooking for 10-12 minutes. Pour in the 2 kinds of vinegar and let them evaporate; add the cherry tomatoes, raisins and sugar, and leave to cook for another 10 minutes. Season with salt, the chopped mint leaves and the pine nuts. Stir thoroughly and take the pan off the heat. Leave it to rest for 5-10 minutes before serving.
