In May 2019, frequent rain and low temperatures had made us worry, first, about the vines‘ flowering phase, and later, about the ripening of the grapes. A rise in temperature at the very beginning of summer, meant that the vines flowered regularly and reduced the delay in ripening. The grapes, packed full of polyphenols and anthocyanins, coloured the grape musts almost like ink. Ageing was, as always, "personalised“ - for the Cabernet it took place in barriques of French oak, for 75% new ones and the rest already used once, while 20% of the Sangiovese aged in new wood. After the usual 20-22 months, we "assembled“ the wines and waited for another 4-6 months before bottling, to help harmonise the blend. The wine is not filtered, and the suspended fine lees ensure sensations of density and softness in the mouth, as well as a minimum use of sulphites.
Tasting - Colour: deep and dark cardinal red that tends towards garnet as time passes. The nose: toasted cocoa, coffee and vanilla, cigar box and a hint of sweet fruitiness. In the mouth: strong and impetuous, it fills the mouth with flavour and leaves a lingering persistence of both retronasal aromas and tannic richness.
