Olive blend: Leccino, Canino, Frantoio, Carboncella and others.
Mild temperatures, accompanied by light rain, allowed for very abundant flowering and excellent fruit set. Thanks to the particular micro-climate in the two areas (both well ventilated and in the proximity of lakes – Bolsena in Lazio and Trasimeno in Umbria), the olives were able to survive the stress of a slightly droughty summer, until the rain started falling once more towards the end of the season. They ripened completely and the harvest was abundant and of excellent quality.
Tasting – The oil is an intense green colour and also has intense aromas: marked notes of unripe olive, fresh grass, and meadow plants such as thyme, wild mint and calamint. Complex and strong, but never “aggressive”, the bitterness and pungency harmonise with soft subtlety.
The Fattoria, aided by the Famiglia Lo Franco Foundation, for 10 years now has been working to convert to Organic – Biodynamic agriculture the land (and its owners!) near to that cultivated by La Vialla, in Tuscany, Umbria, Lazio and Puglia, as well as elsewhere. Over 90 collaboration projects have been set up and those with a number of “olive-growing friends” have given rise to two oils, which we have christened “l’Etruscòlo” and “la Murice”, made with olives produced by the growers themselves (in Tuscany, Umbria and Lazio for the former, and in Puglia for the latter) with the support of La Vialla and its agronomists. The olives are “followed” from field to mill, and the oils undergo the same scrupulous analyses as all the Fattoria’s products.
