Even in a season well-balanced between rain and hot weather in the Oltrepò Pavese area, the grapes for this wine were left to ripen a little more than normal for sparkling wines: the “Metodo Ancestrale” (= Ancestral Method) used to make it doesn’t foresee any addition of concentrated grape must or sugar, but simply direct fermentation of must naturally richer in sugar... an even more “whole” sparkling wine. This unmediated method, without racking or base wines (at the right moment, the tanks’ “hatches” are simply closed in order to obtain the formation of bubbles), is beneficial for the wine’s characteristic freshness and primary aromas, as well as its “health”: the sulphite levels are incredibly low, roughly 1/3 of those in a conventional sparkling wine, of the kind normally found on sale. The delicate pinkish nuance is the “signature” of Pinot Nero.
Tasting - Colour: shimmering lead-white, with subtle onion-pink nuances. The nose: dog rose delicately reveals itself, followed by red currant and a slight aroma of camomile. In the mouth: good effervescence is perceived, with just a touch of fine notes of yeast and a fruity, floral aftertaste.
Wine and Food Pairing – It’s delicious for an aperitif and “beyond”… with appetizers – onion frittata, savoury pancakes, cold cuts, crostini – meat or fish carpaccio, rice or pasta dishes with simple sauces.
