This grapevine of very ancient origin, dating back to Etruscan times, grows in the hills of central Tuscany… the grapes for the white Casa Conforto come from the most exposed vineyards and the ripest bunches (on the contrary to those used for the Bianco Valdichiana). In 2021, some of the grapes picked were even a pinkish colour, giving must full of golden-yellow nuances. After the phase of "turbulent“ fermentation (at around 17 °C for 15-18 days) racking was carried out, in order to separate the heavy lees and avoid excessive structure and colour; only the fine, fragrant lees were maintained in suspension in the wine, preserving it from oxidation, maintaining the characteristic freshness and reducing the use of sulphur dioxide.
Tasting - Colour: golden-yellow with lead-coloured highlights, but brilliant. The nose: aromas of ripe apple and white plums, followed by slight notes of acacia honey. In the mouth: it‘s powerful, well-structured, almost invasive in its complexity.
Wine and Food Pairing - A wine that is versatile to combine: with white meat, seafood dishes, flavoursome fish specialities such as baked fish, elaborate fish or meat starters, delicate cold cuts or fresh cheeses.
