A wine that’s “outside the box”, hazy, slightly orange-coloured… somewhat misunderstood at first, it has now become an idol among the Fattoria’s wines – whole, unfiltered, a “homemade”recipe. Aged in elegant oak, creamy, intense, fruity, this wine seems slightly sweet but is actually dry (less than 1 g/l of residual sugars!). The hot and dry 2021 season impacted the Chardonnay grapes, which were rich in sugars and gave wines that had a high alcohol content and were slightly more “mature”. The Viognier, on the other hand, maintained a good balance between acidity and sweetness, and the percentages of grapes used were just changed slightly (60% Chardonnay and40% Viognier, instead of the previous 70% and 30%) to obtain the right freshness in the wine.
Tasting – Colour: golden yellow with orangey highlights, due to the particularly rich extraction and the fact that the lees remain in the wine. The nose: an almost “wild” bouquet of intensely fragrant flowers and yellow fruits; accompanied by shades of dried apricot, walnut and vanilla, concluding on notes of peach and acacia honey. In the mouth: soft, almost sweet (but it’s dry!), fresh like a white wine, dense like a red. It’s very like drinking fruit in syrup… but without the sugar!
Wine and Food Pairing – Full-bodied and intense, it combines best with fragrant, flavoursome dishes, with fish “in guazzetto”, tasty Cacciucco or aromatic Bouillabaisse. It also appreciates fried vegetables or white meat, as well as dishes with aromas of “far away places”, curry, ginger and saffron (to match its colour), couscous with fish, saffron and citrus risotto with prawns.
